Time to Sow More Fall Brassica Crops

See my recent post for info about fall broccoli and cabbage. Here I provide some more information and discuss other brassicas you could grow in the fall.

Temperature and Timing for Fall Brassicas

  1. Germination: Brassica seeds will germinate at soil temperatures from 41°F (5°C) to 95°F (35°C). 41°F (5°C) can take 45 days for some brassicas, but in summer and fall, this isn’t the end of the thermometer we worry about! In summer and fall, soil temperatures are enough to germinate brassicas in 3-10 days. Optimum soil temperatures for germination are
  • 77°F (25°C) for most Asian greens, broccoli, Brussels sprouts, cauliflower, collards, kohlrabi, pak choy;
  • 86°F (30°C) for cabbage, including Napa cabbage, kale, turnips and rutabagas;
  • 68°F (20°C) for mustard greens, and perhaps arugula (which might do better even cooler)

  1. Cold-Hardiness: Consult this list of winter kill (air) temperatures for brassicas, for the crops you are growing.
  • 32°F (0°C):  some cauliflower curds, some pak choy
  • 27°F (-3°C): many cabbage varieties
  • 22°F (-6°C): some varieties of arugula
  • 20°F (-7°C): broccoli heads (maybe OK to 15°F (-9.5°C)), some Brussels sprouts, some cabbages (the insides may still be good even if the outer leaves are damaged), some cauliflower varieties, some collards (Georgia Cabbage Collards, variegated collards), some mustards/Asian greens (Tendergreen), radishes (Cherry Belle), most turnips (Noir d’Hiver is the most cold-tolerant variety).
  • 15°F (-9.5°C): some broccoli and cauliflower leaves, some cabbage (Kaitlin, Tribute), Red Russian and White Russian kales, kohlrabi, rutabagas (American Purple Top Yellow, Laurentian), most covered turnips, winter cress.
  • 12°F (-11°C): some broccoli perhaps, some Brussels sprouts, some cabbage (January King, Savoy types), most collards, Koji greens, covered rutabagas
  • 10°F (-12°C): Purple Sprouting broccoli for spring harvest, a few cabbages (Deadon), some collards (Morris Heading can survive at least one night), Belle Isle upland cress, probably Komatsuna, Chinese Thick-Stem Mustard may survive down to 6°F (-14°C), covered winter radish (Daikon, China Rose, Shunkyo Semi-Long survive), Senposai leaves (the core of the plant may survive 8°F/-13°C), Tatsoi, Yukina Savoy.
  • 5°F (-15°C): some kale (Winterbor, Westland Winter), many of the Even’ Star Ice Bred greens varieties and the Ice-Bred White Egg turnip are hardy down to 6°F (-14°C)
  • 0°F (-18°C): some collards (Blue Max, Winner, McCormack’s Green Glaze), Even’ Star Ice-Bred Smooth Leaf kale
  • -5°F (-19°C): Leaves of overwintering varieties of cauliflower, Vates kale survives although some leaves may be too damaged to use. Lacinato Rainbow Mix kale may survive this temperature.

  1. Your Climate: Consult WeatherSpark. com to see when it begins to get too cold in your area. At our farm, the average daily low temperature on November 30 is 36°F (2°C). Decide your ideal harvest date for each crop. Although kohlrabi can take 15°F (-9.5°C), I’d want to get it all harvested by November 30.
  2. Days to Maturity: Next factor in the number of days a crop takes to reach maturity. Work back from your desired harvest date, subtracting the number of days from sowing to maturity (or from sowing to transplant, plus from transplant to maturity). Work back another two weeks for the slowing rate of growth in fall. And perhaps work back another two weeks in case in gets colder earlier than usual. This provides your sowing date.
  3. Mid-Winter Harvests: For crops that survive your winter, are you sowing to harvest in the fall, during the winter, or only in early spring? Brassicas for early spring harvest only can be sown in September or October in our climate. For those to be harvested during the winter, you need to have big enough plants going into the winter, to provide sustainable harvests (once a week in November and February and more in spring, plus maybe once a month in December and January)

Various Fall Brassica Crops

In the summer we try to have a No Visible Brassicas Month to break the lifecycle of the harlequin bugs. Once our spring kale is finished, the spring cabbage gathered in, and the spring broccoli mowed down, the only brassicas are seedlings hidden under insect netting. Our hope is to starve out the harlequin bugs or at least deter them from making too many more.

We sow other fall outdoor brassicas a bit later than cabbage and broccoli. These get transplanted from our netting-covered nursery seedbeds, to our raised bed area which is more accessible for winter harvesting and more suited to small quantities.

Asian Greens

Outdoors we grow Senposai, Napa Chinese cabbage and Yukina Savoy. We have also sometimes grown tatsoi and komatsuna. Note that senposai grows quite large – give it similar spacing to collards.

We sow Asian greens for outdoors in the last week of June and first week of July, aiming to eat them before we start harvesting the ones in the hoophouse, which feed us all winter. We use Asian greens outdoors as quick-growing greens to fill the gap before our main fall greens (spinach, kale, collards, cabbage, broccoli) are ready to harvest. We don’t grow a lot outdoors.

If you don’t have a hoophouse, you can sow for outdoors later into the fall than we do, to get a longer harvest season than you otherwise would. And you certainly can direct seed them.

Collards

We sow collards in the first two weeks of July and transplant the bare-root transplants from the nursery bed when they are 3-4 weeks old. We plant at 18” (46 cm) in the row, with rows 12” (30 cm) apart. (if you grow a large kale, you might want similar spacing. Our Vates kale is small)

Brussels sprouts

are rather a challenge in our climate, and not worthwhile. We have worked on finding the best variety (Oliver) and timing for our situation. Harvest timing is critical, as Brussels sprouts will not overwinter here.

Cauliflowers

are a tricky crop for us too. Be sure to check the “days to harvest” for each variety (they vary widely) and sow at a realistic date to get a crop before too many frosts endanger the curds. The number of days quoted for fall varieties of cauliflower already allows for the expected rate of growth at that time of year, so the 14 days for slower growth isn’t a factor. However, cauliflower is more tender, so allow for the possibility of a fall frost earlier than average.

Kohlrabi

We sow Vienna kohlrabi mid-July and transplant early August at 8” (20 cm) apart in the row, with 9-10” (23-25 cm) between rows. Later sowings (up till early September) would also work for the fast maturing varieties. Superschmelz Kohlrabi (60 days from transplanting) can also be summer sown for fall harvest. It produces 8-10” (20-25 cm) bulbs, which remain tender and an attractive globe shape.

Kale

We direct-sow two neighboring beds of kale on each of 8/4, 8/10, 8/16 and then carefully thin them, leaving one plant every 12” (30 cm). These plants grow quicker than transplants, as they have no transplant shock. Meanwhile, if we have gaps, we use the carefully dug thinnings from those beds to fill them. We want a lot of kale, and there isn’t time to transplant it all. Dividing up the sowings lets us focus on watering just one pair of beds at a time. Vates kale is the hardiest variety we have found, although I’d love to find a taller Scotch curled variety that could survive our winters (Winterbor does not survive as well as Vates).

Rooty Brassicas

Radishes, rutabagas and turnips are also brassicas, but I won’t say more here. look in the further resources.

Brassica Aftercare

Brassicas started in hot conditions do not usually bolt if they have enough water.

  • Protect seedlings and the new transplants with insect netting if you have brassica leaf pests (most of do!) You can remove the netting when the transplants are well established, or leave it on.
  • Use shadecloth to keep greens cool in hot weather, or plant them in the shade of other plants.
  • To keep crops in good condition later into the winter, use rowcover. I recommend thick Typar 1.25oz rowcover, which provides 6F degrees of cold protection. I wouldn’t spend the money on anything thinner, it’s too frustrating! We do not normally use rowcover in the winter for kale and collards, as they will survive without. In harsh winters we lose the collards.

Cultivation is a simple matter of hoeing, weeding, watering as needed, and watching for pests.

Root Crops to Plant in Central Virginia in September

In September the days get shorter and we get our last chance to plant crops to feed us during the winter. Much more of our garden time will be spent harvesting this month!

In early September we can direct sow several root crops.

  • Daikon and other winter radish (in very early September);
  • Turnips (by 9/15);
  • Kohlrabi only takes 60 days from sowing to harvest. They can be direct sown or transplanted from flats or an outdoor nursery seedbed at the beginning of September. Kohlrabi is hardy to about 15°F (-9.4°C). Our night temperatures will be higher than that until the beginning of November;
  • Small radishes by mid-September. We usually squeeze these in on the south shoulder of a bed of kale, because they grow quickly and we don’t need a whole bedful. By the time the kale needs the space, the radishes will be gone.
  • In the hoophouse, we start our winter crops by sowing radishes and leafy greens on 9/6 or 9/7.

It’s too late for any slow-growing crops like carrots. We can just squeeze in some beets at the beginning of September, if we take good care of them. Hoeing, weeding and thinning at the first opportunity will help them grow a bit faster and make up for lost time. We could cover them with rowcover to warm their airspace and soil, once we have got them established and tidied up. I hate to cover weedy crops with rowcover – you just know it encourages weeds to grow faster! Beets won’t die of cold until 12F for my favorite, Cylindra, so they have quite a while yet. In our winter hoophouse, we sow radishes six or seven times. It is a science and an art to time the sowings to provide a succession of delectable little radishes with no gaps in supply and no overlap of plantings and gnarly big roots. I have made a graph of radish sowing and harvesting dates to help us even out our supply.

Here’s a chart. 1/25 is our last worthwhile sowing date for hoophouse radishes.

Root Crops to Harvest in Central Virginia in September

During September, the root crops we can harvest include beets (and beet greens), carrots, radishes, turnips and horseradish (which I have more to say about below). We hold off on parsnips, if we have grown those, as the flavor improves a lot after a frost.

We could harvest potatoes, which I have written about in Potato Harvesting and Root Crops in June. We hold off on sweet potatoes until October, and I’ll write about them in a post of their own in a few weeks. If you need to harvest earlier, read the chapter in Sustainable Market Farming.

Special Root Crop Topic for September in Central Virginia: Horseradish

Horseradish, Armoracia rusticana, a perennial, is very easily propagated from pieces of root. It can be hard to get rid of if you change your mind! It’s wise to plant your perennial food crops in a special place that isn’t part of your annual crop rotation space. Remove all perennial weeds before planting horseradish or any other perennial vegetable. Ours is beside our grape vines, near our rhubarb. Full sun or partial shade will work. Horseradish looks like a big bad dock growing, but is in fact a brassica. Horseradish can provide value-added products for out-of-season sales, as well as a pungent treat in cold weather.

Buy or beg crowns or root pieces, and plant them 4-6 weeks before your average last frost date. Horseradish grows best in cool, damp regions with temperatures between 45°F (7°C) and 75°F (24°C). But in central Virginia, temperatures go from 0°F (-18°C) and 100°F (38°C) and we have more than enough horseradish, so don’t worry too much about that temperature range.

Plant crowns just at soil level. Plant root pieces with the top just below the surface and the bottom end covered with 2-3’ (5-8 cm) of soil. Space horseradish plants 24-36” (60-90 cm) apart. If you are worried about it spreading into important nearby plants, create a metal, wood or stone barrier 24” (60 cm) deep around the bed.

Keep the soil damp, add some compost once a year. You are unlikely to have any pest or disease problems with this crop. Young plants should not be harvested until the leaves are at least 12” (30 cm) long.

Horseradish is traditionally harvested September-April (the months with R in them!). The roots go as much as 2 ft (60 cm) deep and are very strong (but not as sturdy as gobo, Chinese burdock). Use a strong shovel, spade or digging fork, and start loosening the roots from 6” (15 cm) away. If you hear or feel a root snap, be glad! The goal is to extract some of the roots and firm up whatever remains, to continue growing. Water the plants after harvest if the weather is dry.

Collect the harvested root parts in a bucket, and wash them right away. You can store them dirty, but it is harder to get them clean later. Harvested roots can be refrigerated for several months until used – they seem fairly impervious to rot.

When you process horseradish do it outdoors, with googles on. I kid you not! This can be a good porch activity in sunny chilly weather. After thoroughly washing and scrubbing the roots, peel them carefully. Throw the peelings in the trash, not the compost pile, as they easily regrow from tiny pieces!

The peeled roots can be ground up in a food processor, to make relish or sauce. Or if you prefer, use a fine grater.

Other Root Crop Tasks in Central Virginia in September: Washing, sorting and storing root crops

Harvesting

How you harvest roots depends on the scale of your farm and the equipment you have. For example, with carrots, you can mow or tear off the tops, then undercut with machinery, then lift. Or you can use the tops to help get the carrots out of ground, as we do, loosening them with a digging fork, then trim.

Ensure gentle treatment and no bruising of roots while harvesting. As we all know, it is important to avoid bacterial contamination. Wounds and abrasions can lead the crop to pick up new bacteria from the environment. Crops can be punctured by sharp edges of containers as well as the more obvious knives and fingernails.

Trimming

Our method is to bring the harvested roots to a shady spot to trim, wash, sort and bag. We have a printed sheet, optimistically called “Perfect Vegetable Storage” to help us remember from year to year the tips we have learned. Usually we need scissors or knives for a clean cut, and usually we aim to leave about ¼” (0.5 cm) of leaf-stems attached to roots. It might be quicker to tear the leaves off, but this doesn’t give such good results and can cause the crop to need extra storage space. When we harvest carrots for immediate use, we snap the tops off right at the junction of the foliage and the root. When we harvest for storage, we trim with scissors to leave a small length of greens.

Washing and rinsing

After washing, and perhaps before, comes cooling. Make full use of all possibilities, such as damp burlap, or high percentage shade cloth, or the shade of trees, buildings, or a truck. At the washing station, crops may be sprayed down on a mesh table, or dunked in troughs or buckets of clean water. Washing can also act to cool the crop.

Draining away the water is important. Drain on a mesh table or in a holey bucket, a suspended mesh bag or laundry basket. Barrel root washers have the draining stage built in. We don’t have a rotary barrel root washer, much as we’d like one. Here’s our manual method.

  1. As you cut, gently drop the roots into buckets of water. This lets the dirt wash itself off to some extent, as you continue to cut more. Use whatever size and type of container seems most efficient.
  2. When the wash container is full, switch from trimming to washing: rub each root with your hands and drop it gently into a container of clean rinse water. Depending on the cleanliness of the roots after washing, it may be possible to reuse the rinse water. Or else make it be wash water for the next round. Once the water is quite dirty it needs to go. Gently pour it round a tree, or on the ground somewhere else. Avoid causing a washout by flinging a bucketful all in one place. Rinsing needs pretty clean water.
  3. When the rinse container is full, get two clean holey buckets. Take the roots one at a time out of the rinse water (don’t rub then any more, just lift them out). Sort as you go.

Sorting storable roots from non-storable

  1. Decide if the root is Storable or is Use First (cull, or home use). Storable are sound, reasonably large. Use First may be small (less than ¾” diameter, less than 3” long, maybe) or damaged (deep holes, soft spots, fresh complex cracks). Open dry cracks or snapped-in-half roots may heal over and store just fine.

  2. Put the storable ones in one holey bucket and the non-storable (Use First) in the other. It helps to have 2 different colored buckets. It’s better to err on the side of calling doubtful ones Use First, but it’s even better to learn good sorting, as too many Use First roots can’t all be used quickly.
  3. When a Use First bucket is full, set it aside, or put on the cart or truck. Once a Storable bucket is full, set it aside to drain thoroughly before bagging. Do not confuse categories. Do more trimming, washing, rinsing, sorting.
  4. When the Storable roots have drained, get a well-perforated plastic sack. Ensure there are enough holes and big enough ones. Buy perforated bags or perforate your own. If you need more holes, the safest method is to lay the bag on the grass, stand on diagonally opposite corners, then stab the bag with a largish knife. Make about 3 cuts across the width of the bag and about 6? 7? 8? down the length. Or fold the bag and use a 3-ring paper hole punch in several places. Refold and repeat.
  5. Gently pour the Storable roots into the well-perforated bag. We usually use 50 pound bags. Tie the neck with a short length of rope and make a masking tape “flag” label with the date and the type of vegetable.

Storing

When all the bags of storers have been gathered up, record the number going to the cooler on an Inventory clipboard. If there is no official tally sheet, make one on a full size sheet of paper.

We store bulk roots in a walk-in cooler, up on a high loft/shelf. Use pallets in the loft for better airflow under the bags. Start a new pallet for each different type of vegetable and for a substantially different date, eg fall carrots separate from spring carrots. Keep inventory: once a month, someone takes stock of what we have and updates the list.

Here’s the presentation I gave at the VSU  2013 Commercial Berry and Vegetable Filed Day at Randolph Farm, Petersburg on Thursday (6/27). Actually this slide show has some extra slides that I had to cut out to fit the time available. Registration for the field day had doubled compared to last year and reached 500. I don’t know how many were at the presentations, maybe 250. The other option was to continue the outdoor exploration of the research plots.

One section I would have loved to have seen, if I hadn’t been signing and selling books, and answering questions about VABF, was Clif Slade’s “43560” (Forty-three five sixty”) plot. He is aiming to demonstrate the viability of earning $43560 per year from one acre (43560 square feet) of intensive vegetable production. Meanwhile, back at the farm, I’m sowing fall broccoli, cabbage and senposai, weeding sweet potatoes, sowing another succession of beans and one of edamame. More of our time is spent harvesting these days. Today we pulled a bag of beets, 2 buckets of beans, 2 buckets of lettuce (we’ll have a short gap until the next bed comes in), 6 buckets of broccoli, one bucket each of cukes, squash, zucchini, turnips and kohlrabi. Most of our crops are getting harvested every two days at this point (except lettuce, cukes and zukes). So no cabbage, kale, chard, scallions, blueberries or celery today.

During the Month:

Lettuce Factory: Sow heat-resistant lettuce outdoors, every 8 to 6 days, #10, 11, 12, 13, 14. Transplant 120/week (1/3 bed). #7, 8, 9, 10, 11 this month.

Deal with potato beetles with Spinosad [or Neem] once larvae are seen, if >50 adults/50 plants or >200 larvae/100 plants. Spinosad: Spray when bees not flying (early morning or late evening.) Shake well, 1-4 Tbsp/gall. Expect to need 1.5-2 hours and 9-10.5 galls. Clean and triple rinse the sprayer. Do not flush in creek or pond. Repeat if needed in 6-7 days – could spot spray where larvae are seen. Flame weed potatoes before 12” high, if needed.

Deal with asparagus beetles, if necessary. See notes under April.

Early May:

Continue cutting sweet potato slips until we have enough.

Transplant when hardened off: celery, celeriac, lettuce #7, main tomatoes (2’).

Set out drip tape & bioplastic mulch , transplant Romas (2’),  peppers (18” when soil 70°F, dogwood blooms dropping), hot peppers, and melons #1, sweet potatoes

Sow peanuts (120d), asparagus beans in bed w/ celery, okra, sunflowers. limas #1, cow peas #1 (68d)

Roll out driptape and bioplastic mulch for watermelons.

Cover Crops: Sorghum-Sudan, soy, buckwheat, or pearl millet as summer cover crops, now frost is past.

Mid-month:

Plant sweet potatoes, 16″ apart, with 4-4.5′ between ridges, 5’ at edges of patch. Install drip irrigation on ridges and plant at every other emitter. Ideal if soil temp is 65°F for four consecutive days before planting.  If weather dry, dip roots in mud slurry before planting.  Plant 2-3” deep, with at least 2 nodes in ground, and at least 2 leaves above ground.  If slips are long, plant horizontally to increase production.

Transplant lettuce #8, eggplant (2’ apart, single row in center of bed, spray off flea beetles with jet of water & cover immediately), watermelon, insectaries, (okra if not direct-sown – mulch later, when soil warm).

Set out drip tape and biodegradable mulch and transplant melons and watermelons at four weeks old max. Cover for 3 weeks. Move rowcover off broccoli (12 pieces) and strawberries (~8 pieces) Watermelon needs 12 pieces.

In greenhouse sow tomatoes #3, filler watermelons & Romas. Sow cukes & squash #2 if spring is late and cold, and direct-sowing not wise.

Sow beans #2 (5/14, 28 days after #1), edamame #2, carrots #6, sunflowers.

Till between rows of corn #1 & transplant in gaps and/or thin to 8”.

Weed onions 3 weeks before expected harvest date, and broccoli.

Garlic: Harvest garlic scapes, remove mulch from garlic, and weed.  Move mulch to weeded broccoli.

Check maturity of potato onions and garlic. Likely harvest order is fall potato onions 5/25-6/10, hardneck garlic 5/30-6/15, spring potato onions 6/3-6/18, bulb onions 6/11-6/30, softneck garlic 6/5-6/15.

#4 Spring Tractor Work mid-May – Disk areas for June potatoes, corn 3,4,5, & later succession plantings of beans, squash, cucumbers.

Late May:

Mow between no-till paste tomato rows before mulching with hay. Fill gaps, weed, tuck mulch.  Set up posts and string weave the tomatoes, using thick baler twine for lower 3 rows. Really try to keep up with weekly string-weaving.

Clear empty coldframe and mulch with cardboard or plant something.

Till each corn twice, undersowing at 2nd tilling (30 days), when 12” high, with soy for #1-5, oats/soy for #6. Thin corn to 8”. Avoid cultivating corn after it’s knee-high—roots are shallow.

Sow corn #2, cowpeas #2; cukes #2 (picklers and slicers), summer squash & zukes #2 5/24 (or in greenhouse 5/14, transplant 6/7), watermelons #3, winter squash 5/26 (put woodash with seeds to deter squash vine borer). If squash sowing is late, don’t sow Tahitian butternut – slow.  Cover cucurbits (perhaps not winter squash) against cucumber beetles. Max. cuke beetle population is mid-May; keep susceptible plants well-covered until flowering.

Transplant lettuce #9, 10, 11; Roma paste tomato replacements for casualties, insectary flowers. Fill gaps in eggplant, peppers, melons, watermelons.

Store any seeds not needed until fall or next spring, in basement (radishes, onions, winter squash, watermelon).

Harvest fall planted Potato Onions in dry weather, after tops have fallen, (5/25-6/10, spring planted 6/3-18).  May not all be ready at once. Handle gently. Dry as clusters in barn on wooden racks for 1-2 months, using fans. Service fans or buy new as needed. Eat potato onions >2.5” without curing, unless yield is very low, in which case label & refrigerate, then plant in September. Weight after drying for 1 week is approximately twice the final weight. First sorting is late June. Use the Worksheet and Log Book

Harvest garlic when 6th leaf down is starting to brown on 50% of the crop (ie .5 green leaves, so that 5 skins cover cloves), or cut open horizontally- when air space is visible between. stem and cloves it’s time to harvest.  [Could replant small cloves immediately for garlic scallions.] Allow 15 mins/bucket harvesting and 15 mins/bucket for hanging in netting in barn,.

Till garlic area, sow soy & buckwheat to control weeds until fall carrot planting.

Plan fall and winter crops for raised beds.

Cover crops: can sow buckwheat, soy, millet, and sorghum-sudan during May.

Perennials: Put up blueberry netting before fruit sets. Weed & water & top up mulch. Mow grape & fall raspberry aisles. New grapevines: remove side branches and fruitlets. Weekly: visit grapes and log progress 4/20-5/30. If asparagus weeds are getting out of hand, mow down one or more rows to keep control.

We’ve been starting seedlings since late January, and the greenhouse is filling up with flats of lettuce, cabbage, kohlrabi, spinach, scallions and broccoli. We’re eating our way through the lettuces that grew overwinter in the compost in the block-work greenhouse beds, and shoveling out the compost to fill our flats. All our seedlings are grown in 100% home-made compost. We screen compost to fill the beds in September and transplant lettuce there in October. When we need the compost for the seedlings, it has mellowed nicely and has plenty of worms. This beats buying in bags of compost, or chipping lumps off a heap of frozen compost outdoors in January! Our greenhouse has a masonry north wall and a patio-door south wall. It has no heating apart from the sun (this is Zone 7). This space is warm enough and just big enough for all our seedlings once they have emerged. For growing-on the very early tomatoes and peppers, destined for our hoophouse, we use an electric heat mat and a plastic low tunnel in one corner of the greenhouse. Many seeds benefit from some heat during germination and are then moved into slightly less warm conditions to continue growing. This means it’s possible to heat a relatively small space just to germinate the seeds in. We use two broken refrigerators as insulated cabinets, with extra shelves added. A single incandescent lightbulb in each supplies both the light and the heat (we change the wattage depending on what temperature we’re aiming for). Some people construct an insulated cabinet from scratch, with fluorescent lights suspended above the flats.

We use traditional coldframes for “hardening-off” our plants (helping them adjust to cooler, brighter, breezier conditions). They are rectangles of dry-stacked cinder blocks, with lids of woodframed fiberglass. Having heavy flats of plants at ground level is less than ideal for anyone over thirty-five! Shade houses and single-layer poly hoop structures with ventable sidewalls and benches for the flats are a nicer option. Some growers report that some pests are less trouble when flats are up on benches. Others say flats on the ground produce better quality plants. According to the nighttime temperatures, we cover the coldframes with rowcover for 32°F–38°F (0°–3°C), add the lids for 15°F–32°F (–9°C–0°C) and roll quilts on top if it might go below 15°F (–9°C). For brassicas, lettuce and our paste tomatoes (a big planting), we use open flats — simple wooden boxes. The transplant flat size is 12″ × 24″ × 4″ deep (30 × 60 × 10 cm). It holds 40 plants, “spotted” or pricked out in a hexagonal pattern, using a dibble board. For sowing, we use shallower 3″ (7.5 cm) flats. Usually we sow four rows lengthwise in each seedling flat. We reckon we can get about six transplant flats from each seedling flat. This allows for throwing out any wimpy seedlings, and lets us start a higher number of plants in a smaller space. Because we transplant by hand, and because we hate to throw plastic away (or spend money when we don’t need to), we use a range of plastic plant containers. For crops where we are growing only a small number of plants of each variety, we use six- or nine-packs, or a plug flat divided into smaller units.

The first crops sown are not necessarily the first ones planted out. Our spinach gets sown Jan 24 and transplanted out 4 weeks later. The early tomatoes get planted in the hoophouse at 6 weeks of age (slower-growing peppers go in at 7.5 weeks with rowcover at the ready!). Lettuce goes outdoors after 6.5 weeks, cabbage after 7.5 weeks, cipollini mini-onions after 8 weeks. These are early season timings and as the days warm up and get longer, seedlings grow more quickly. Being a few days later sowing something in early spring makes little difference, as later sowings can catch up by growing faster in the warmer weather. If the spring is cold and late, you may find your greenhouse packed to the gills with flats you don’t want to take outside. We try to put the faster-maturing crops near the doors and keep the open flats, which will need spotting-out, near the accessible north side. But let’s not complain about the bounty of so many plants! Spring is an exciting time of year, full of new growth and new potential. Working in the greenhouse with tiny plants on a sunny day when it’s cold outside is a special treat.

Meanwhile in our garden we’re weeding the asparagus and sowing more seeds in the greenhouse: celery and celeriac, kohlrabi, broccoli and more cabbage. The first lettuce and cabbage are ready for spotting out. I’m hoping the sun will come out this afternoon and I can enjoy myself doing those tasks. Tomorrow we might prune the blueberries.

Buy seed potatoes mid-month and set out to greensprout (chit) before planting: 65°F (19°C) and light.

This week in the garden we have started fall clean-up. We packed away the rowcovers preserving the last rows of green beans, squash and cucumbers, and harvested the last of those crops. Two nights with lows of 22F made it clear it was time. We removed the okra and eggplant “trees”, and pulled up the t-posts from the tomato rows and the asparagus beans. We bundled the asparagus bean trellis netting, along with the bean vines, and tied it up in the rafters of our greenhouse. It will stay there till spring when we will dance on the bundle in the parking lot and shake out the dried bits of vine, so we can use the netting for the 2013 crop.

We discovered we can use our power-washer to clean the t-posts before storing them. This saves a lot of time, and converts the job from a tedious chore with knives and wire brushes into a “power rangers” opportunity. We like to get the posts really clean before storing them to reduce the chance of carrying over soil-borne tomato diseases to next season.

We have started clearing crops which are less cold-tolerant. This week we are working on the vegetables that get killed at temperatures of 25°F and 20°F. Fall weather in our part of Virginia doesn’t usually get this cold this early, but there’s no arguing with it. We’ve got the Chinese cabbage (Napa cabbage) in and we’re going for the small bit of bulb fennel soon (both 25°F crops). We’re picking the broccoli twice a week as long as it lasts, although yields are right down now. Next we’re after the celeriac, turnips (no rutabagas this year), and winter radishes. Sadly our fall beets all failed, so we don’t need to dig those. We still have some from the spring crop in good condition in perforated plastic bags in the fridge.  Kohlrabi, cabbage, carrots and parsnips are more cold-tolerant, so they can wait to get harvested in a few weeks. We still have lettuce and celery outdoors under rowcover and hoops. And some of the greens and hardier leeks will feed us all through the winter. Twin Oaks is now in Climate Zone 7a. This means the range of the average annual minimum temperature is 0°F to 5°F.

We’re getting ready to plant garlic. The soil has certainly cooled down enough this year! We decided to cut back our total amount of garlic planted this year for two or three reasons. One is that we think we’ll still have enough if we plant 16% less, and maybe we’ll be less wasteful. Another is that we hope the time we’ll save at harvest and curing will enable us to take better care of what we have got, and less will get wasted that way. Another is that it will help our crop rotation in the raised beds, where we grow a lot of alliums – garlic and potato onions over the winter, onions in spring, shallots and scallions in the mix, and leeks from mid-summer to late winter. Sometimes doing a smaller amount well is more productive than over-extending ourselves  with a big crop.

Yesterday we started separating the garlic cloves (“popping” the cloves) at our annual Crop Review meeting. This is when the crew gathers to work through an alphabetical list of crops we grew and talk about what worked and what didn’t and what we want to do differently next year. We plan to try a small amount of West Indian gherkins as an alternative to pickling cucumbers, which seemed plagued by disease. (I saw some very robust gherkins growing at Monticello in September.) We’re looking for a heat-tolerant eggplant variety to trial alongside our well-liked Nadia, which shut down during the early summer heat. We intend to make smaller plantings of edamame next year, and harvest smaller amounts more often, so less goes to waste. We want to try Sugar Flash snap peas and another dwarf early-yielding type of snow peas. (Dwarf Grey works for us, but Oregon Giant didn’t). We’re going to try some purple bush beans to see if that helps us get harvests of nice small beans and fewer ugly giants in the buckets. We debated the harvest size of okra and asparagus too. We vowed to grow fewer different varieties of broccoli and try to find a decent red cabbage. This year we tried Integro, Ruby Perfection and Mammoth Red, but none produced a good amount of nice sized heads. We used to be happy with Super Red 80, but gave it up after two bad years. next year we’ll try Red Express. We strategised about to get red sweet peppers as early as possible.

As the tasks to do outdoors start to wind down, we’re upping the pace of our winter planning season. Our next tasks include doing an inventory of the seeds we still have and figuring out our garden plan, so that we can work towards ordering the seeds we want in sensible quantities.

Lettuce Factory: Sow lettuce in hoophouse, for January transplants.

Write Thank You Letter to Paracrew (part-time workers)

Early November: Finish up sowing cover crops in Nov. Can sow winter wheat in early November (won’t winter-kill). Sow wheat or rye in carrot beds by 11/30(?), or if too late for cover crops, just spread carrot tops on beds.

Sow onions to overwinter in hoophouse.

Plant hard-neck garlic when soil temp at 4″ deep is 50°F, and mulch immediately, not too thickly.

Plant leftover small garlic cloves for garlic scallions and garlic greens.

Potato onions: till beds.  11/1-12/1: Plant medium-size (1½-2” diameter) potato onions, at 6”, or wider if supply is limited.  Cover with ½-1” soil, then mulch. If planning a January planting of small potato onions, prep bed and roll mulch now.

Sow spinach (for spring harvesting) in early November if not done already.

Mid November: Free trapped garlic shoots from over-thick mulch, when 50% emerged.

Cover lettuce, spinach (“burns” below 10°F), celery, zukes & cukes and Chinese cabbage. Use double hoops for the spinach, celery, and the last lettuce bed.

Harvest: celeriac (hardy to 20°F), beets (15-20°F), turnips(20°F), kohlrabi (15°F), winter radish (20°F), rutabagas (OK to 20°F), carrots (12°F), parsnips (0°F) in that order. Wash and store in perforated plastic bags in walk-in cooler. Record yields.

After curing, store boxes of sweet potatoes in basement cage (55-60°F, 80-90% humidity).

Sort white potatoes in storage 2 weeks after harvest.

Spread lime or gypsum as needed, referring to soil analysis results.

Potato Onions: sell small ones (<1½”) or store on racks until January. Ideal conditions 32-40°F, 60-70% humidity, good ventilation, layers < 4” deep. Do not seem to suffer from freezing.

Winterize the rototillers and BCS mower.

Planning:

Week 1: Check the accounts and prepare Budget Requests for economic planning. Write Informant. Revise Seed Inventory spreadsheet.

November Harvests: last outdoor lettuce (hardy to 15°F with rowcover), beets (15-20°F), broccoli (25°F), cabbage (12°F), cauliflower, celeriac (20°F), celery (15°F with rowcover), chard (10°F), fall greens, collards (5°F), fennel (25°F), kale (0°F), kohlrabi (15°F), komatsuna (15°F), leeks (fall leeks hardy to 12-20°F, winter ones to 5°F or lower), parsnips (0°F), scallions (25°F), senposai (12°F), spinach (0°F), tatsoi (10°F), turnips (20°F), yukina savoy (10°F).

December – Time to Rest

Perennials: see November. Cut fall raspberry canes (after leaves have dropped) with pruners, to the ground. Weed raspberries. Hang blueberry drip tape in the branches. Dig docks from asparagus patch.

Plant medium potato onions, if not done in November.

Drain and store the hoses and irrigation. Clean up stakes, labels.

Planning:

Week 1: Prepare seed order spreadsheet. Decide seed order.

Week 2: Revise Lettuce List, lettuce Log. Spend last of money. Check expenditures and spend remaining budget. File the year’s accumulated notes.

Here’s our list of tasks for October. If you garden in zone 6 or 7, your list might be similar. If you live in a very different climate zone, leave a comment about your list for October, and how many weeks different your area is from ours.

During the month

Weed and thin fall crops in raised beds, especially spinach and kale. Thin carrots to 3”, kale to 12”.

Lettuce Factory: Transplant sowing #37 to fill cold frames; #38, 39, 40, 41, 42 in Greenhouse beds (9″ spacing).

Rowcover (no hoops): beans, Chinese cabbage, pak choy, Tokyo bekana, seedlings for hoophouse, collards  (hardy to 10°F, but cover keeps quality).

Cold frames:  Row cover between 32-28°F.  Add lids between 28-15°F.  Add quilts below 15°F.

Foliar spray greens with seaweed a few days before frost, to toughen them up.

Use overhead irrigation on peppers & tomatoes at night and some raised beds with tender crops.

Early Oct: Finish sowing spinach, kale by 7th for overwintering (last chance).

Transplant lettuce #37 to fill cold frames; #38, 39 in Greenhouse (9″ spacing).

Roll up drip tape from winter squash and sweet potatoes.

Move stored garlic from basement to fridge – store below 40°F or above 56°F, never 40-50°F.

Mid Oct: Till finished raised beds and sow wheat or rye before the end of the month.

Garlic Beds: Compost (5-6 tractor buckets), till and prepare beds.

Transplant lettuce #40, 41, 42, 43 in Greenhouse as needed, filling any gaps.

Get soil tests done, when soil is not too wet.

5th fall disking: By mid-month disk and sow cover crops where possible. Sow wheat or rye as covercrops – too late for oats or most clovers (Austrian Winter Peas Sept 15-Oct 24).  Could sow winter wheat mid-Sept to early Nov (good for small plots that are hard to reach with the tractor) and after sweet potatoes).

Harvest peanuts mid-late Oct after a light frost.  Wash, dry, cure 6 days in solar dryer facing east (don’t heat over 85°F), store.

Harvest sweet potatoes before soil temps go much below 55°F, or night air goes below 50°F: on 3 mild days – generally in the week that first frost usually occurs (10/7-14). Even a few hours exposed to temps below 50°F will cause chilling injury. (Frost on the leaves does not of itself damage the roots). Clip vines, dig carefully, set tubers in plant-clusters to dry on the soil. Select seed tubers (med-size tubers from high-yielding plants).  Save 100 Georgia Jet, 100 Beauregard, 20 each White and Jubilee. Cure in boxes with wood spacers and cover with newspaper, in basement with furnace going full time, for 7-10 days (85-90°F, 80-90% humidity).  Use fans. Splash water on floor. Curing is complete when skin is undamaged after rubbing two together. Restack boxes in storage cage.

Harvest white potatoes before the first frost (average Oct 14) if possible. Cure in root cellar at 60-75°F for 2 weeks, with good ventilation, then cool the cellar to lower temperatures: 50°F by 10/31, then 40°F for the winter.

Late Oct: Transplant lettuce #44, 45, 46 as filler in Greenhouse. Double hoop and cover spinach.

Planning: List successes & failures from labels. Prepare Garden Planning Schedule, Crop Review Sheets. Clean labels after info is recorded. Pray for a killing frost. File crop record info. Audit labor budget and plan endgame. Plan main garden layout. Hold Crop Review meeting.

Clear winter squash, tomatoes and peppers in order to sow cover crops, by 10/24 if possible. Sow rye alone or with crimson clover or winter peas. Crimson clover by 10/14; AWP, wheat by 11/8

6th fall disking: After the killing frost, or end of Oct if no frost: pull up tomato stakes and roll up drip tape, disk nightshades, melons, winter squash, sweet potato and white potato patches.

Check through veg in storage, squash once a week, white potatoes two weeks after harvest.

Perennials:Last mowing of clover in grapes in early Oct, not too short, and not too late in the year. Weed & mulch strawberry beds, and remove extra runners. Renovate if not already done. Start weeding, fertilizing and mulching the blueberries, raspberries, rhubarb and grapes.

Time to say goodbye to the rhubarb until April.

October Harvests: Asparagus beans, beans, beets and beet greens, broccoli, cabbage, cantaloupes, carrots, cauliflower, celeriac, celery, chard, Chinese cabbage, collards, corn, cow peas, cukes, edamame, eggplant, horseradish, hot peppers, kohlrabi, komatsuna, leeks, lettuce, limas, maruba santoh, okra, pak choy, peppers, radishes, Roma paste tomatoes, scallions, senposai, spinach, tatsoi, tokyo bekana, tomatoes, turnips and turnip greens, winter radishes, winter squash, yukina savoy, zucchini.  Could lightly harvest rhubarb before frost.
