Hoophouse Greens Clearance, Warm Weather Crops Established

Our hoophouse is in transition from the winter greens to the early warm weather tender crops. The photo above shows the old lettuce mix we are about to pull up, young tomato plants edged with late spinach, and a row of early snap peas. We usually grow the quick dwarf Sugar Ann, but seed was not available this year so we are growing Sugar Snap – much taller and slower! Usually we snap the peas in three pieces and put them in our salad mix, but I think we will have finished harvesting hoophouse salad mix and moved on to cutting outdoor lettuce heads when these peas are ready. This amount of peas is far too little to be served alone as peas for our hundred people!

Transition from cool to warm weather crops

  • We flag planting spots every 2’ (60 cm) down the mid-line of the bed – see the photo above.
  • Harvest crops that are too close
  • Dig holes
  • Add a shovelful of compost in the hole
  • Plant the warm weather crop
  • Over the next few weeks, harvest to the south of the new plants, and anything between them that’s too close
  • Over the following few weeks, harvest the rest of the greens between the new plants and then crops to the north.
  • This overlap allows the new crops to take over gradually, and the winter greens to continue harvest in March and April
  • Having hoophouse greens in March and April is very valuable, because the newly planted outdoor crops are not ready to harvest yet, and the overwintered ones are getting sparse.

We still have some patches of winter greens, such as the Golden Frills and Scarlet Frills mustards above. We grow different types of frilly mustard to add zip to our salad mixes when they are small. Also, the Brassica juncea group  is resistant to Root Knot Nematodes, which we have been dealing with. We just learned that Golden Frills and Scarlet Frills are both more bolt-resistant than the pretty pink-stemmed mizuna (not a juncea mustard) and Ruby Streaks.

We still have some baby lettuce mix in good shape. Here is our fourth sowing:

Our salad mixes currently are spinach, pea shoots, lettuce mix and small Frills or a homemade brassica salad mix. We are starting to crave the crunch and juiciness of big lettuces! We have a few still in the hoophouse, the last of the ones we have been harvesting leaves from all winter and spring. Most of those October-transplanted lettuces have bolted now, and have been chopped up to cycle back into the soil.

Our warm-weather crops include two beds of tomatoes, one each of peppers, cucumbers and squash. Here are photos I took yesterday. This year we are trying out Golden Glory squash (yellow zucchini), because they are able to set fruit without pollinators, and we have been having lots of trouble with what I believe are unpollinated squash with brown ends failing to develop.

More recently I heard that they may in fact have blossom end rot. I had not known this can affect squash. It has the same cause as the malady in tomatoes: a shortage of calcium reaching the top of the plant. This can be because of a shortage in the soil, or because cold temperatures slow down its transport. Less likely to be a problem in the hoophouse! In fact it is so hot some days that we have already scheduled a date to pull the big shadecloth over the top.

Lettuce in November, Twin Oaks Garden blog

I have written blogposts about growing lettuce in October, September, August, July, June and May. On October 25, I reported that we have covered our last outdoor bed of head and leaf lettuce, and an “emergency” bed of baby lettuce mix with double hoops and rowcover. Now, one month later, we are waiting out this cold snap (19F/-7C last night) until we get a mild spell to uncover those beds and finish harvesting them. We want to move the hoops and row covers to the outdoor spinach beds.

We are now harvesting only winter salad mixes, no more big bowls just of lettuce. We are using leaves from the outdoor lettuce, the outdoor lettuce mix, or leaves from the lettuce in the greenhouse, according to whatever is most ready. We chop the lettuce up as we harvest. I start with about half of the harvest bucket full of chopped lettuce. I notice that it takes 3 half-buckets of harvested greens to fill one bucket! The greens settle, and when mixed they take less space than they started out using.

Lettuce varieties we are currently harvesting include Green Forest, Hyper Red Wave, Merlot, new Red Fire, Oscarde, Panisse, Red Salad Bowl, Red Tinged Winter, Revolution, Salad Bowl, Star Fighter, Tango, Winter Marvel and Winter Wonderland. Last winter we grew some Osborne Multileaf varieties we liked a lot. This year I learned the hard way that pelleted seed doesn’t store well. As pointed out by Johnnys Seeds in their JSS Advantage Newsletter January 2012

“Some seeds, particularly lettuce, are primed before pelleting, which begins the metabolic process leading to germination. Because some of the early steps toward germination are completed before the seed is planted, germination happens more quickly. Germination times can be 50% faster with primed seed. When seeds germinate quickly, they may avoid potential problems including soil crusting, weeds, and soilborne diseases. On the down side, primed seed doesn’t have the same storage life as unprimed seeds, so we recommend that you purchase only enough for the current season.”

I like to mix three crop families in every salad mix: lettuce, spinach/chard/beet greens/brassicas. I also like to mix the colors and textures, so if most of that day’s lettuce leaves are green, I’ll be sure to get some Bulls Blood beet leaves or Ruby Streaks or Scarlet Frills. I don’t make the same mix every day, as variety is the spice of life!

I love the taste of spinach leaves in salad, and we have lots of spinach (outdoors, in cold frames and in the hoophouse). I love the colors of baby Bright Lights and Rainbow chard. I chop those stems small – not everyone likes a big hit of chard flavor in their salad. When I harvest Bulls Blood beets I snip the stems close to the base of the plant, line up a handful of leaves, then snip off the stems just below the leaf blades, before chopping the leaves into the bucket. These stems are kind of wiry, not good food. I don’t like to leave the leaf stems on the plant for two reasons. One is that the stems “cage in” the developing plant, reducing the access to sunlight and photosynthesis. The other is that the stems die back later and rot. Better to remove them right away. I do the same with spinach.

Last month I mentioned the brassica salad mix we sowed in our hoophouse 10/2. We have made three cuts already – very good value for the tiny amount of space occupied. Mizuna, Ruby Streaks, Scarlet Frills and Golden Frills add a ferny shape and some loft to the mix. Mizuna is very mild, the other three are spicy. Other brassicas we are currently cutting small for our salad mixes include tatsoi and Russian kales (red and white). At some point, deeper in the winter, we’ll try to leave the kale alone to grow big for cooking greens. This will happen when we are shorter of cooking greens than salad items, and the kale has become more robust. Some of the crew are more hardcore than me, and include sturdier greens, like senposai. Later in the winter, other crops will come to the fore.

We also include as microgreens any thinnings from recently sowed rows of almost any greens, including radishes and turnips if they are not bristly-leaved varieties.

Our 10/24 hoophouse sowing of baby lettuce mix is almost ready to harvest – maybe in the next week or so. We have made an 11/2 second sowing of mizuna and friends, but the seedlings are still tiny, showing a big difference between the temperatures on 10/24 and those a week later on 11/2.

For cutting lettuce I like the plain steel scissors from Lee Valley. They are sturdy, easy to tighten and sharpen and ambidextrous. They are a traditional Chinese style.


Lastly, for those of you who want to know more about the Twin Oaks garden specifically, let me introduce you to the Twin Oaks Garden blog. It’s written by Wren Vile, one of the upcoming managers. I will be retiring as garden manager on March 1 2017, and Wren and Brittany will take over the day-to-day running of the garden. Ordering seeds! Seed Viability and Varieties New to us

I’ve been busy putting our seed orders together. As we grow so many different crops, it’s quite a time-consuming process. And I hate to buy too little and be out in the field on planting day, looking at an almost empty packet. Equally, I hate to buy too much, which either wastes money (if we throw the extra away), or else causes us to risk sowing seed that really is too old, and won’t do well. I keep a chart of how long different types of seed last:

   “Opinions vary a bit about how many years seeds of different vegetables are good for. The fuller story is that storage conditions make a big difference. You can make your own decisions, weighing up the information supplied, your knowledge of how carefully you stored the seeds, the information on each packet about percentage germination when you bought it, and the economic importance to you of that particular crop. If you always transplant lettuce, as I do, you can risk one of your four varieties in that sowing coming up poorly, and just plant out more of the other three if it fails. Many seed catalogs include information about seed longevity, and so does Nancy Bubel in The Seed Starters Handbook.

A simplified version is as follows:

  • Year of purchase only: Parsnips, Parsley, Salsify, and the even rarer Sea Kale, Scorzonera
  • 2 years: Corn, Peas and Beans of all kinds, Onions, Chives, Okra, Dandelion, Martynia,
  • 3 years: Carrots, Leeks, Asparagus, Turnips, Rutabagas
  • 4 years: Spinach, Peppers, Chard, Pumpkins, Squash, Watermelons, Basil, Artichokes and Cardoons
  • 5 years: most Brassicas, Beets, Tomatoes, Eggplant, Cucumbers, Muskmelons, Celery, Celeriac, Lettuce, Endive, Chicory.”

Rather than deteriorating with age, some very fresh seed has a dormancy that needs to be overcome by chilling (lettuce). Other seed contains compounds that inhibit germination. These can be flushed out by soaking in water for about an hour (beets).

Another of the challenges with seed ordering is converting between grams, ounces and seed counts. Here’s a helpful table of 1000 Seed Weight for 13 crops.

Our main seed suppliers are FedcoJohnny’s and Southern Exposure. Fedco has great prices, especially on bulk sizes, great social and political commentary in the catalog, and no glossy pages. Johnnys has some good varieties that Fedco doesn’t, and a ton of useful information tucked away on their website. Southern Exposure is best on southern crops and heat tolerant varieties which we can’t expect seed companies in Maine to specialize in. Plus, SESE are my friends and neighbors.

This year we are trying some new varieties. Generally we like to have some reliable workhorses that we know well, and trial a few new things, especially if we hear our favorite varieties are no longer available. Last year our Nadia eggplant couldn’t cope with the heat. For a while in early summer they didn’t grow at all – no new flowers, never mind new fruit. So next year, alongside Nadia I’m trying 3 that should deal better with heat. Florida Highbush is open-pollinated, from the Seed Savers Exchange. Epic and Traviata are hybrids from Osborne Seeds.

I also bought some Sugar Flash snap peas from Osborne. We have been big fans of Sugar Ann, but I’ve heard Sugar Flash is even better on flavor, yield and harvest period. We’re going to find out!

For a couple of years we really liked Frontier bulb onions as a storage variety for this climate and latitude (38N). Frontier disappeared from the catalogs of our usual suppliers and we tried Gunnison and Patterson. This year – no Gunnison! And we didn’t get a good test of Patterson last year, as we failed to weed our onions enough, after an initial enthusiastic good go at it. We were looking again at Copra, one we grew some years ago (before we found Frontier). I lucked out when I decided to see if Osborne had Gunnison, while I was shopping there. they didn’t, but they had Frontier! And then when I was shopping at Johnny’s, I found they did have some Gunnison for online sales only. So I ordered those too!

We’re also trying Sparkler bicolor sweet corn from Fedco and a drying bean I won’t name, as the seed is in short supply. And this year we’re hoping Red Express cabbage will prove to be a reliable little worker. We used to like Super Red 80, but had several years of poor results. Since then, none of the other red cabbages we tried have satisfied us in terms of size, earliness, productivity and flavor.

After a few years of poor pickling cucumbers, we’re going outside the box and trying West Indian Gherkins from Monticello, where they were grown by Thomas Jefferson (and some of the enslaved people, no doubt). These are not closely related to actual cucumbers, but are used similarly. I saw them growing in the Monticello garden when I was there for the Heritage Harvest Festival in September, and they are certainly robust and productive in hot humid weather. We’ll see how the pickles turn out!

My only other “impulse buy” was the Salanova Lettuce new at Johnny’s. They are 6 varieties of head lettuce designed to be used for salad mix at a single cutting. Quicker than  snipping rows of baby lettuce with scissors. More fun than plain lettuce heads. They are loose heads of small leaves in various shades of green and red, and two “hairstyles”: frizzy and wavy.
